It’s Soup Time!! I don’t think there’s anyone who loves Fall more than me. When Fall comes around I think of orange, olive green, pumpkin, and pumpkin-spiced anything, warm vanilla, and pomegranates. It’s such a magical time and throughout these times I crave soup. One big pot of veggies and other sorts of starches to fill you up. There are many benefits to making soup! You can make a big batch and eat it for days! Which saves time on food prep and cooking. You can also add all of the nutrient-dense veggies, starches, herbs, spices, and wait for the aroma to fill your home. Soup du jour my Fall Northern Bean & Vegetable Soup!

There’s nothing like a comforting soup to make to carry you through the cool months of Fall and fill ya up! If soups were a food group it would be my #2 food group after oatmeal of course. This soup can be made to fit your taste buds anyway you please, feel free to make it your own. But I wanted to share this with you as me and my Mother, and others I’ve shared this recipe with have enjoyed it so much.
